On SKY

If you only have a SKY receiver then unfortunately your options are limited. There are quite a few specialist foreign channels on the SKY system but quite a few of them are subscription only.

For Spanish TV, you can tune to channel 795 for the TVEi station which is a mixture of news, discussion based programmes, drama and documentaries. Check this Wikipedia page for more details.

On Other Satellites

By far the best way to watch foreign satellite tv for free is to invest in a relatively cheap digital receiver and extra dish so you can view the foreign offerings on other satellites. There are a multitude of channels available and too many to list here, however, a good starting point would be to check out international-satellite.com which lists all the foreign channels available by appropriate language. Lyngsat.com also gives you all the channels available accross all the available satellites.
